The Marchesi 1824 Panettone with Chestnuts is an autumn retelling of the Classic Panettone. In this leavened celebratory cake the freshly collected chestnuts are naturally candied in a syrup of water and sugar which enhance the chestnut’s falvour and consistency. Together with the Burbon Vanilla, chestnuts are blended with the classic dough, result of a slow leavening using only the Marchesi’s sourdough.Compared to the yeasts more commonly used for bread and pastries, products baked with sourdough require several additional hours to raise. The slow rising helps the so-called beneficial microorganisms to develop bringing to the leavened cake numerous favourable properties and a unique flavor.
