The Marchesi 1824 Chocolate Panettone is a flavorful retelling of the Classic Panettone. In this great leavened cake, the classic Marchesi dough, the result of a slow and skillful process exclusively using yeast starter, is enhanced with extra-fine cocoa powder from the Ivory Coast. The soft, light dough turns brown and the aromas become warmer and deeper. Compared to the yeasts more commonly used for bread and pastries, products baked with sourdough require several additional hours to raise. The slow rising helps the so-called beneficial microorganisms to develop bringing to the leavened cake numerous favourable properties and a unique flavor.
